Lapsi recipe | Broken Wheat pudding | Sweet Lapsi



 Lapsi is a dish made from broken wheat which is slightly roasted and then cooked with jaggery and ghee. Broken wheat is nothing but whole raw wheat grains cleaned and then processed coarsely. It's a very healthy and easy to make dish. There are many variations for this recipe. This dish can also be made with milk and sugar. Check the Notes.

Ingredients:

1 cup Broken Wheat / Dalia
1 cup Jaggery
1 tablespoon Ghee / clarified butter
few nuts of your choice
2-3 cups water

Method:

  • Heat ghee in a pan or thick vessel.
  • Once ghee melts, add broken wheat / Dalia and roast the broken wheat until it changes its color to golden brown on low flame. Stir continuously or else it will burn.
  • Slowly pour the warm water and allow it to cook completely.
  •  As broken wheat takes little longer to cook. This process can also be done in pressure cooker.
  • Once the broken wheat is completely cooked and tender add jaggery and mix well on low flame.
  • This recipe can also be made with milk. If you are using milk donot use jaggery as milk may curdle instead use sugar.
  • I prefer jaggery as it is rich in iron and healthy option.
  • Switch off the flame and let it rest for few seconds before serving. Sprinkle some cardamom powder and garnish with nuts of your choice on top.
  • Serve hot or warm.

Switch off the flame and let it rest for few seconds before serving. Add some cardamom powder and nuts of your choice.
                                                                                            
                                     Serve warm this healthy and tasty dish.

Notes:

  1. Requirement of water may vary depending upon the quality of broken wheat.
  2. Adjust the sweetness as per your taste, may add less or more jaggery.
  3. Can also use milk instead of water but you have to use sugar if using milk as jaggery may make milk curdle.
