Ivy gourd stir fry | Tindora sabzi | Tendli sabzi


This Ivy gourd sabzi is a simple dish and makes a healthy (packed with iron, fiber and vitamins) side dish for rice or you can have it with chapati or phulkas. It's a easy to make recipe with simple ingredients.

Ingredients:

250 grms Tindora / Ivy gourd
1 tablespoon coriander powder
1/2 teaspoon red chilli powder
1/2 teaspoon garam masala
1/4 teaspoon turmeric powder
1/4 teaspoon cumin seeds
1/4 teaspoon mustard seeds
few curry leaves
asafoetida
salt to taste
oil

Method:

  • Wash and clean Ivy gourd in running water.
  • Next is to cut out the top and bottom ends, discard them.
  • Then chop all the tindora into thin roundels or vertically as per your desired shape.
  • Heat the oil in a pan or kadai, add mustard seeds, cumin seeds, asafoetida and curry leaves
  • Add chopped ivy gourd into the pan and saute nicely. Cover the pan with the lid and cook on low to medium flame. Stir occasionally.
  • Once the tindora is all cooked add the dry spices like chilli powder, turmeric powder, coriander powder, garam masala and some salt. Mix again and cook for few minutes with lid uncovered.
  •  Serve with rice, chapati or phulka.

Add chopped ivy gourd to the pan and saute nicely. Cover the pan with the lid and cook on low to medium flame. Stir in between.

                                                     Serve with rice, chapati or phulka.
