This Tutti frutti / candied cake is colorful, delicious, soft and spongy. Tutti frutti is one of those thing my husband is addicted since his childhood. So, thought of baking this cake at home.I never expected baking this at home was so simple and easy. If you are a beginner in baking like me, don't worry this cake is super easy to bake. It's an absolute beginners delight. To be frank, i was not at all sure about this recipe so used very little tutti frutti. But to my surprise this turned out Yum!! n thought of sharing with you all.
2 cups All purpose flour / Maida
1 cup white Sugar
1/2 cup soft buter / 1 stick
2 tsps baking powder
1/2 tsp baking soda
1 egg
1/2 cup milk
1/2 cup tutti frutti
2 tsps vanilla essence
pinch of salt
Method:
- Preheat oven to 350 F/175 C and grease the pan with butter and flour.
- Sprinkle some flour on tutti frutti and keep it aside.
- In a mixing bowl sieve flour, baking powder, baking soda, salt and keep aside.
- In a large bowl, add soft butter and sugar and whisk till it becomes nice smooth and creamy.
- You can use manual or electric beater to whisk.
- Then add egg and vanilla essence and whisk it again.
- Next add the flour which was kept aside in 2 batches alternating with milk. Do not over beat just mix and fold well till combined. If using electric beater use the low speed.
- There should be no lumps, fold and combine it into a smooth batter.
- Next add 3/4th of the tutti frutti ( you can also use nuts) and fold and mix it again
- Pour the batter into the greased loaf pan and sprinkle the leftover tutti frutti on top.
- Bake it for 40-45 mins until the top turns golden brown and a toothpick or skewer inserted comes out clean
- Once it's done place a pan on wire rack to cool down completely before slicing and serving.

- Keep an eye on the cake while baking it may take less or more time as all oven is different so is the settings.
- If your cake starts turning brown from top right away or before 30 mins lower your settings.
