Whole Wheat Muffins | Whole Wheat Walnut Muffins



What I like about these muffins are that they are made with whole wheat flour of course and no processed sugars and heaps of butter, Yes you read it right!!




These muffins are fluffy, light, moist and flavorful at the same time. Easy and quick to whip and packed with goodness of walnut. You can add any nuts or toppings of your choice. So try this satisfying and wholesome muffins.

Ingredients:

3/4 cup Whole Wheat flour
6 tbsp Sour cream
4 tbsp Oil
1/4 + 2 tbsp Honey
1 Egg
1/8 tsp Salt
1/4 tsp Baking powder
1/4 tsp Baking soda
1 tsp Vanilla extract
2 tsp Instant coffe

For Toppings:

1/4 cup Chocolate chips
1/4 cup Walnuts

Method:

  • Sift flour with baking powder and baking soda and keep it aside. Chop walnuts into small chunks. In a bowl beat egg with coffee until light and frothy.

  •  Add sour cream, honey, vanilla, oil and salt. Beat well for a minute or so.
  • Preheat the oven to 400 F.
  • Add flour and mix until combined.

  • Fold in half of walnut and chocolate mix and save the rest for toppings.
  • Spoon the batter in the lined muffin tin and fill these till the brim Top them with choco chips and walnut chunks.

  • Bake the muffins for 15-20 minutes or until the toothpick inserted comes out clean.

Notes:
  1. Do not over fold the batter.
  2. These muffins are not overly sweet. If you prefer them sweeter add about 1-2 tblsp of extra sugar to suit your palate.

Pav Buns / Home made eggless Pav



These buns are extremely soft, once you learn to make your own Pav/ Buns at home, you will never turn back to the bakery. It taste exactly like the store bought and can make it with healthier ingredients and shape as you desire.

Ingredients:

2 cups All purpose flour
1 1/2 cup Water
2 tbsp Sugar
2 1/4 tsp Instant Yeast
2 tsp Salt
4 tsp Butter
2 tbsp Milk powder

Method:

  • Mix warm water, sugar and yeast together and let it sit for about five minutes or until the yeast get activated.


  • Onto a work table add All purpose flour, Salt and Milk powder and mix well.
  • Then add the activated yeast to the flour. (little at a time)

  • Knead the mixture (lift, spread, stretch and throw) into little sticky and soft dough for 10 minutes to form gluten in it. Then add butter and knead.
  • Place the dough onto slightly greased bowl. Cover it and let it rise ( preferably warm place) until it's doubled in size for 1-2 hours.
  • Gently deflate the dough and turn it out onto a lightly floured work surface and give knead it for last time for 1-2 minutes.
  • Divide and shape the dough according to your preference and place them on to a baking tray.
  • After shaping cover them with a kitchen towel or plastic wrap until they puff up (30-45 minutes)
  • Preheat the oven to 350 F and slightly milk wash the bread.
  • Bake for 20-25 minutes.

  • Soft Pav / Buns are ready. Serve it with baji or vada


Notes:
  1. Water required may vary, Use lesser amount in summer and greater in winter. So add little at a time
  2. You can brush with egg wash to get golden colour for the crown.
  3. Baking time could vary depending upon the oven.

Homemade Sandwich Bread | How to make bread



Ingredients:

21/2 cup All purpose flour
1/2 cup Milk
11/2 tbsp Butter
11/8 tsp Instant dry yeast
11/2 tbsp Sugar
3/4 tsp Salt
1 Egg
1/4 cup Water

Method:

  • In a bowl mix flour, yeast, sugar and salt. Then add beaten egg. Mix everything well.

  • Melt butter in 1/2 cup of milk. The milk should be slightly warm. Add mixture into the flour and knead for 2-3 minutes.


  • Now add 1/4 cup of warm water and knead well for 8-10 minutes. Knead until the dough is shiny and elastic.


  • Shape it into a ball and apply oil.


  • Place it into a well oiled bowl. Cover it with cling wrap and let it rise.


  • Once the dough double in size, punch down the dough gently and knead for a minute or two.


  • Roll the dough into a rectangle with the help of rolling pin.


  • Shape it into a loaf.


  • Grease the loaf tin with oil and let the dough proof.


  • Preheat the oven at 350 degree F. Cover the tin with aluminium foil and bake for 25 mins. You can sprinkle some flax seeds or oats on top (optional).

  • Now remove the aluminium foil and milk wash / apply butter on top and keep it back in the oven until the crust is evenly brown.



  • Remove from the oven and allow it to cool.

Halloween Cookies recipe / Spooky Cookies / Eggless Cookies recipe

Yayyy!! Tomorrow is Halloween, a favorite holiday among children. Most of the houses are decorated and store shelves are stocked with costumes and candy. So yesterday i baked this cookies, quick and easy to bake and spooky to look at. Dangerously addictive cookies and will definitely decorate your Halloween table for sure.


 Even though they look bit spooky but kids will simply love it munching for their snacks. You can decorate or shape as you like. Do try this cookies this Halloween.

Ingredients:
1+1/4 cup All purpose flour
1/2 cup Butter ( softened)
1/3 cup Powdered Sugar
1/2 tsp Vanilla extract
1/4 tsp Salt
pinch of Baking Soda
few almonds and chocolate chips.

Method:

  • Combine butter,sugar, vanilla extract in a bowl and beat it until they turns soft and fluffy.
  • Sieve together the flour, baking soda and salt.
  • Gradually add the flour mixture and turn everything as a soft dough.
  • Wrap it and keep it in a fridge for 20-30 minutes.
  • Preheat the oven to 350F.
  • Grease or line the baking sheet onto the baking tray.
  • Take a small portion of dough and shape it as per your desire can also use cookie cutter and arrange it onto the baking tray.
  • Bake it for 15-20 minutes.
  • Let them cool completely.
  • Enjoy this Halloween.

Blueberry cake recipe


What is a birthday without a cake,right? I baked this cake a while back for my hubby's birthday. As much as I'd have loved to bake him a special cake, it has always been a flop. So thought of baking loaf cake as i had some blueberries in my fridge. To my surprise it turned out to be very moist. Do try this yummilicious cake.

Ingredients:

2 cups all-purpose flour / maida
1 cup sugar
1/2 cup greek yogurt
1/2 cup butter/ vegetable oil
1 teaspoon vanilla extract
2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1 1/2 cup bluberries
1/2 tbsp flour
2 tbsp lemon / orange (juice and some zest)

Method:

  • First preheat the oven to 375F/ 180C and grease the pan with butter and flour or can also use parchment paper. 
  • In a mixing bowl add butter / oil and sugar and beat together till creamy.
  • Next mix in the eggs one at a time beating well for minute.
  •  Then add the yogurt, vanilla extract and salt. Mix on low speed just until combined.
  • In a separate bowl whisk flour and baking powder. Then add the flour into the batter in 2 lots whisking to incorporate between each addition. 
  • Add lemon or orange zest and juice, mix again. Then take the blueberries and coat it with some flour and add into the batter.
  • Give it a gentle mix.
  • Spread the batter evenly into the pan.
  • Sprinkle the leftover blueberries on top and use the back of the spatula to press the blueberries gently. Bake for 40-50 minutes or until the skewer inserted into the middle of the cake comes out clean.
  • Remove the cake from the oven and allow it to sit for few minutes to cool and enjoy.

Tutti frutti cake | Christmas cake recipe


This Tutti frutti / candied cake is colorful, delicious, soft and spongy. Tutti frutti is one of those thing my husband is addicted since his childhood. So, thought of  baking this cake at home.I never expected baking this at home was so simple and easy. If you are a beginner in baking like me, don't worry this cake is super easy to bake. It's an absolute beginners delight. To be frank, i was not at all sure about this recipe so used very little tutti frutti. But to my surprise this turned out Yum!! n thought of sharing with you all.


 You can customize it in many different ways. Do try this you are gonna love it...

 Ingredients:

2 cups All purpose flour / Maida
1 cup white Sugar
1/2 cup soft buter / 1 stick
2 tsps baking powder
1/2 tsp baking soda
1 egg
1/2 cup milk
1/2 cup tutti frutti
2 tsps vanilla essence
pinch of salt

Method:

  • Preheat oven to 350 F/175 C and grease the pan with butter and flour.
  • Sprinkle some flour on tutti frutti and keep it aside.
  • In a mixing bowl sieve flour, baking powder, baking soda, salt and keep aside.
  • In a large bowl, add soft butter and sugar and whisk till it becomes nice smooth and creamy. 
  • You can use manual or electric beater to whisk.
  • Then add egg and vanilla essence and whisk it again.
  • Next add the flour which was kept aside in 2 batches alternating with milk. Do not over beat just mix and fold well till combined. If using electric beater use the low speed.
  • There should be no lumps, fold and combine it into a smooth batter.
  • Next add 3/4th of the tutti frutti ( you can also use nuts) and fold and mix it again
  • Pour the batter into the greased loaf pan and sprinkle the leftover tutti frutti on top.
  • Bake it for 40-45 mins until the top turns golden brown and a toothpick or skewer inserted comes out clean 
  • Once it's done place a pan on wire rack to cool down completely before slicing and serving.

Notes:

  1. Keep an eye on the cake while baking it may take less or more time as all oven is different so is the settings.
  2. If your cake starts turning brown from top right away or before 30 mins lower your settings.
