Healthy No Bake Energy Bites | Healthy Oats Ladoo | No Sugar Bites



Today's recipe is a quickie recipe. These are easy to make, super affordable and great to have before or after workout or even as a snack specially for kids. You can customize with any flavor you like.   Just took few minutes to make and more minutes to click them and was resisting myself from nibbling every time i re-arranged it for a better click. Go on, try it and let me know how you liked it.

Ingredients:

1 Cup rolled Oats
6-7 Medjool Dates (Pitted and soaked in warm water)
1/2 Cup Peanut butter
1/4 cup Shredded coconut
2 tbsp Chia seed ( optional)
2 tbsp Flax seed (optional)

Method:

  • Place all ingredients except coconut into a food processor and pulse until smooth.


  •  I made it into two variation one with coconut and the other without. Added coconut at the end. Both taste good. Roll dough out into 1 inch balls.

  • Store in an air tight container.
Notes:
  1. For more sweet you can add extra dates or honey.
  2. I prefer roasting oats for seconds before grinding, but can skip this step.

Strawberry cake / Strawberry cake from scratch



Anyone else dreaming of Spring yet? I think it's at this time of the year that many folks are starting to get just a bit tired of winter, especially if you live in one of the blizzard states. After shoveling snow for weeks and having to work and drive in it, I'm sure a sunny warm day is calling your name. So in honor of the coming Spring let's bake yummy strawberry cake 😛

This cake has a soft, lightly sweet and moist crumb with bursts of strawberry flavor in every bite.
Simple ingredients, easy to make, perfect for entertaining and completely yummy.



This delicious from scratch strawberry cake is paired with fresh strawberry. It has intense and wonderful strawberry flavor paired with little whipped cream or sauce is a perfect match  If you are a strawberry fan you will love it.



Ingredients:

2 Cups All purpose flour
2 Eggs
1 cup Sugar
1 cup Sour cream
1/2 cup Oil
1 tsp Vanilla extract
1/4 tsp Salt
2 tsp Baking powder
1 Bowl Strawberries

Method:

  • First butter the pan and preheat the oven to 375 F. In a large mixing bowl, using an electric mixer, beat together 2 eggs with 1 cup sugar on high speed for 5 minutes or until light in color and thick.

  • Add 1 cup sour cream, 1/2 cup oil, 1 tsp vanilla extract and beat on low speed until well combined.

  • In another bowl, whisk together 2 cups flour, 2 tsp baking powder and 1/4 tsp salt until well incorporated. With the mixer on medium to low speed add flour mixture to the batter into 3 batches letting the flour incorporate with each addition and continue mixing just until well combined.

  • Pour half of the batter into prepared pan. Top with half of diced strawberries 

  • Then spread remaining batter over the top. Cover the surface with remaining half of the halved strawberries pressing them down just slightly into the batter.

  • Bake at 375 F for 45-50 minutes or until a toothpick inserted into center comes out clean 
  • Let cake rest in pan 10-15 minutes then run a thin spatula around edges to loosen from pan. Cool until just warm or at room temperature.
  • Enjoy with some Sauce or cream or just plain.


Notes:
To measure flour correctly spoon flour into a dry ingredients measuring cup and scrape off the top with a straight edge.

3 Ingredient Chocolate Ice Cream | Eggless Ice Cream without Ice cream maker | Homemade Ice Cream


# Kids' Delight-Chocolate Theme


 Ice Cream!! Do i even need to say anything. How about eggless homemade ice cream? This super easy recipe will yield delicious and creamy homemade ice cream all without the use of a Icecream maker and egg.This method does not prevent any ice crystals and does not have to blend or whip them multiple times. They can be made with any whipping cream, heavy cream, milky mist or Amul fresh cream.



For this recipe I have used my electric beater, however you can also use a blender/ mixer. Just make sure not to over whip the cream. Seriously creamy, you must trust me on this. I would not lead you astray. Do make this at home and enjoy with your friends and family.

Ingredients:

2 Cups Whipping Cream or Heavy/ double cream
250 ml Sweetened Condensed Milk
3 tbsp Cocoa Powder

For Topping: (optional)
Semi sweet chocolate chips
Chocolate syrup

Method:

  • Chill the cream, beater and a deep miximg bowl. Add condensed milk and cocoa powder to another mixing bowl and whisk well and make a smooth lump free chocolate mixture.
  • Pour the chilled cream to the chilled bowl and begin to whip it, initially on low speed to avoid any splashes and later to medium speed.Whip until peaks appear.

  •  Gently fold in the chocolate condensed milk into whipping cream until no streaks appear. Transfer the mixture to a freezer safe container and freeze until set.

  • Can add some toppings of your choice and cover it with plastic cling wrap or butter paper. 
  • Scoop chocolate ice cream and serve with some choco chips and chocolate syrup.

Whole Wheat Muffins | Whole Wheat Walnut Muffins



What I like about these muffins are that they are made with whole wheat flour of course and no processed sugars and heaps of butter, Yes you read it right!!




These muffins are fluffy, light, moist and flavorful at the same time. Easy and quick to whip and packed with goodness of walnut. You can add any nuts or toppings of your choice. So try this satisfying and wholesome muffins.

Ingredients:

3/4 cup Whole Wheat flour
6 tbsp Sour cream
4 tbsp Oil
1/4 + 2 tbsp Honey
1 Egg
1/8 tsp Salt
1/4 tsp Baking powder
1/4 tsp Baking soda
1 tsp Vanilla extract
2 tsp Instant coffe

For Toppings:

1/4 cup Chocolate chips
1/4 cup Walnuts

Method:

  • Sift flour with baking powder and baking soda and keep it aside. Chop walnuts into small chunks. In a bowl beat egg with coffee until light and frothy.

  •  Add sour cream, honey, vanilla, oil and salt. Beat well for a minute or so.
  • Preheat the oven to 400 F.
  • Add flour and mix until combined.

  • Fold in half of walnut and chocolate mix and save the rest for toppings.
  • Spoon the batter in the lined muffin tin and fill these till the brim Top them with choco chips and walnut chunks.

  • Bake the muffins for 15-20 minutes or until the toothpick inserted comes out clean.

Notes:
  1. Do not over fold the batter.
  2. These muffins are not overly sweet. If you prefer them sweeter add about 1-2 tblsp of extra sugar to suit your palate.

Eggless Chocolate cake with Ganache | Simple and Moist Eggless Cake




Ingredients:

 For Cake

1/2 cup All Purpose Flour / Maida
1/4 cup Water
1/2 Cup Sugar ( Powdered)
1/4 Cup Buttermilk
3 tbsp Cocoa powder
1/4 tsp Baking Soda
1/4 tsp Baking powder
1/8 tsp Salt
1/4 tsp Instant Coffee Powder
2 tbsp Yogurt / Curd
2.5 tbsp Oil

For Ganache

75 ml Fresh Cream
113 grms Semi sweet Chocolate
1/2 tbsp Butter

Method:

  • In a bowl sieve All purpose flour, Baking Powder, Baking Soda, Salt and Cocoa powder. Mix well and keep it aside.
  • In another bowl add Sugar, Oil, Coffee( Mix coffee powder with water), Buttermilk and Yogurt.
  • Mix until sugar is dissolved and everything is well combined.
  • Grease the cake pan with butter or parchment paper.
  •  Pre heat oven to 350 F / 180 C
  • Now add dry ingredients into the wet ingredients into 2 batches and mix gently do not over mix.
  • Pour the cake mixture into the greased pan and bake for 20-25 minutes or until the toothpick inserted comes out clean.
  • Take out the pan from the oven and let it cool down completely.
  • Once the cake is completely cool decorate it with ganache or butter cream.
  • For ganache take a bowl add fresh cream and chocolate chips and microwave it for 20 seconds, take it out stir if the chocolate chips or chunks are not completely dissolved microwave it again.
  • Be careful do not burn the chocolate. Can also use the double boiler method.
  • Decorate the cake as per your preference.

Instatnt Gulab Jamun | Bread Gulab Jamun | Sweet Bread Balls


Ingredients:

8 Bread Slice
6-7 tblsp Milk (Whole Milk )
1 tsp Ghee

For Sugar Syrup

Cardamon powder
1 cup Sugar
1 1/2 cup Water

Oil for frying
Saffron ( optional)

Method:

  • Boil sugar and water on medium flame.
  • Once the sugar dissolves add cardamom powder and saffron, lower the flame and let the syrup become slightly thick.
  • Take the bread slices and cut the edges ( brown crust) and discard it. In a mixer grind the bread slices for a second.
  • Take the bread crumbs, add milk and knead into a soft dough.
  • Divide the dough into equal parts, apply some ghee on your palm and make small balls from the dough without applying much pressure.
  • Heat some oil in a kadai and fry the gulab jamuns on low flame until they turn golden brown. Keep stirring continuously for even colour.
  • Take out the fried gulab jamuns in a kitchen towel and drop them into the warm sugar syrup ( not hot or cold)
  • Let the gulam jamun remain in the syrup for 1 hour or until they turn soft.
  • Instant gulab jamun is ready. It can be served warm or chilled, goes best with scoop of ice cream.

Milk Peda recipe with condensed milk / Milk peda or Doodh peda recipe



I made few sweets last week for Diwali and will admit that this quick Milk peda with milk powder was my favourite. It's so quick and requires such a few ingredients which is Milk powder and condensed milk for sweetness. It keeps well for more time atleast for 2 weeks.



 Ingredients:
1 cup Milk powder
1/2 cup Condensed milk
3-4 tblsp Saffron milk
1/4 tsp Cardamom powder
2 tblsp Ghee / clarified butter + 1/2 tsp to grease
few nuts of your choice for garnishing

Method:

  • Soak Saffron in a warm milk and chop few almonds and keep it aside.
  • Switch on the flame to very low and add Ghee and Milk powder. Mix well for few seconds.
  • Then add condensed milk and mix till everything is well combined.
  • Add saffron milk and mix again. Mixture will become thin and will start sticking to the pan.
  • Add cardamom powder.
  • Turn the flame to medium and keep stirring continuously.
  • After few minutes the mixture will start leaving the sides of the pan.
  • Slightly sticky and little runny mass will form.
  • Switch off the flame and let the mixture cool down.
  • Grease you hand with ghee and pinch a small lemon size portion and roll it like a shape of ball.
  • Slightly flatten it and make a dent in center and fill it with chopped almonds.
  • Leave to set for an hour. It will look moist for an hour then it will get the perfect texture.
Pictorial:

Add saffron milk and mix again. Mixture will become thin and will start sticking to the pan. Then add cardamom powder.

Turn the flame to medium and keep stirring continuously. After few minutes the mixture will start leaving the sides of the pan.

Slightly sticky and little runny mass will form. Switch off the flame and let the mixture cool down.

Grease you hand with ghee and pinch a small lemon size portion and roll it like a shape of ball.

Slightly flatten it and make a dent in center and fill it with chopped almonds. Leave to set for an hour. It will look moist for an hour then it will get the perfect texture.

Notes:
  1. Always cook in low flame to avoid burning from bottom.
  2. The mixture will look sticky and shiny so grease your hand while shaping them.
  3. Use full fat milk powder for good result.

Coconut Ladoo recipe with Condensed Milk / Coconut Balls with Milkmaid

Ladoo/Laddu, this popular Indian sweet is made in a jiffy with two simple ingredients i.e desiccated Coconut and Milkmaid. Usually, Coconut Ladoos are made with freshly grated coconut and milk but this recipe is good for busy people and for those who don't have time to make from scratch. This Laddo can be made in variations like by adding some nuts, or by stuffing some nuts or mawa, or by adding some melted chocolate or cocoa to make chocolate laddoo ( specially for Kids).



Laddo is usually prepared during auspicious days like Sankranti, Diwali etc. These Coconut Balls makes an excellent sweet to serve even for sudden guests. So, make this easy breezy laddoos this Diwali and enjoy them thoroughly by sharing with your family and friends. This recipe takes less than 15 minutes to make. Enjoy!!!

1.5 Cup Desiccated Coconut
1/2 Cup Condensed Milk / Milkmaid
1/4 tsp of Ghee (optional)
Some Nuts and 3 tblsp desiccated Coconut for garnishing

Method:

  • Take a non-stick pan, add ghee and desiccated coconut and roast them for 1 seconds on very low flame.
  • Then add condensed milk and mix and combine everything.
  • It will form a mass.
  • Add nuts or cardamom powder at this point.
  • Switch off the flame and let the mixture cool down.
  • Take small portions and form a ball shape and immediately roll them into desiccated Coconut.
